American Oak is an open grained wood.  Some furniture makers use a "grain filler" to fill the grains to provide an even surface.  We prefer to oil the wood in its natural state to bring out its full richness, then use a wax finish to provide luster and shine. Below is the same wood after oiling.  Using this method, the natural colour and grain of the wood is preserved, whilst ensuring a smooth finish.   The only time we would use a "filler" is when using liming wax which of course gives the popular "limed oak" finish.
